What do I Eat?

Carrots and Beets

As a dietitian, I am frequently asked “what do you eat”? For the most part I eat a balanced diet but I still indulge especially when it comes to anything chocolate.

So I decided it would be a fun challenge to do a food journal for two days and tell you exactly what I eat. Food journaling can be great tool to help assist with diet changes and weight loss. Some journaling methods include writing down what you consumed by hand. Today there are many apps and online journals available if you want something more this century.

Day 1

8:15 am

Whole grain cereal eaten dry with earl grey tea and organic nonfat milk

10:30 am

A small Fuji apple for a mid morning snack

12:30pm

Steamed Spinach with Garlic

Salad- mixed green, tomatoes, kidney beans, cabbage, cucumbers with olive oil and balsamic vinegar. I like to top my salads with one of the whole grain prepared salad in the dining commons. Today they had one of my favorites- tabouli.

Ice Water

2:30pm

Handful of Roasted Unsalted Almonds

5:30pm

4 mile run

7:30pm

Roasted butternut squash, spinach, goat cheese, homemade hummus and baba ganoush on a 100% whole wheat flatbread.

Small bowl of red grapes and glass of organic nonfat milk

9:00pm

Handful of toasted oats dry cereal

Day 2

8:15am

Whole grain cereal eaten dry with green tea

11:30 am

Early Lunch: caponata salad, whole grain roll, apple with peanut butter

Ice water

2:30pm

Tangerine

5:30pm

30 day Shred with Julian Michaels (if we are being honest)

7:00pm

Brown rice noodles with red radish and diakon radish, carrots, bok choy, one poached egg with peanut sauce

Glass of organic nonfat milk

7:30pm

1 oz dark chocolate chips

I am not sure how many calories I consumed. I don’t count calories instead I focus on the quality of the food I am consuming. I also eat when I am hungry- if you’re not hungry at the typical lunch hour don’t feel pressure to eat a meal at the standard time. Consider using a food journal to help you make a change in your life.
