No Bake Energy Balls

Trying to eat healthier on the go? Need a quick pre- or post-workout snack to refill your protein and energy? Do you just love easy and delicious snacks? No bake energy bars are exactly what they sound like. They are perfectly portable and are beyond easy to make. All you need is a food processor (or just a bowl and a spoon, really) and some of your favorite ingredients. With the right recipes, they are healthy and delicious, and you can suit them to any of your dietary needs whether you’re gluten-free, lactose-intolerant, or have any allergies. They are also super flexible - any ingredient can be swapped to match your taste or nutritional needs. No bake energy bars are perfect if you need a little kick start in the morning or before a workout, or if you need a midday pick me up. Here’s a recipe for a sweet and nutty bar:

Ingredients:

  • 2 cups dry oatmeal (can be gluten free)

  • 1 and 1/3 cups coconut flakes

  • 1 cup peanut, almond, or other nut butter

  • 1 cup fresh ground flax or chia seed

  • 3/4 cup chocolate chips or cacao nibs

  • 2/3 cup raw honey

  • 1/2 tbsp vanilla extract

Instructions:

 

  1. Combine all ingredients together in a medium bowl until very thoroughly mixed.

  2. Press mixture very firmly into the bottom of a pan and slice into squares OR hand roll into bite-sized balls.

  3. Store in the refrigerator in an airtight container for up to a week

Easy as 123 and you’ve prepped your snacks for the whole week...enjoy!
