A veggie grilled cheese sandwich
Coat a nonstick skillet with cooking spray. Add 2 cups of kale- baby kale is preferred if possible. (Kale: $1.45) You can also use arugula or another leafy green.
Add 1 scallion sliced ($0.11)
Add 1 garlic clove. Mine and saute with kale for 2-3 minutes. Once done remove pan from heat. ($0.05)
Smash ½ avocado and spread on 1 slice whole wheat bread (find an option without added sugar) ($0.81)
Place 1 slice of cheese (swiss or cheddar) to top of avocado. Top with kale mixture and top with second slice of bread. ($0.87)
Coat skillet with spray and heat to medium. Cook until the bread is golden and the cheese had melted about 2-3 minutes per side!
