Entering Carrillo Dining Commons is a multi-sensory experience. Customers are immediately treated to the delicious aroma and warm sight of fresh pizza baking in a Woodstone pizza oven.  Natural light from the outside floods the dining areas which offer mountain, ocean and pool views. Previously a typical 1960’s style cafeteria, Carrillo was transformed in 2002 to a state of the art dining facility featuring 21st century cuisine prepared at platforms stations throughout the building. Serves breakfast, lunch and dinner Monday-Friday, and brunch and dinner Saturday and Sunday.

  • Americana Grill
    • Char grilled burgers, vegetarian burgers, specialty sandwiches, and French fries.
       
  • Made to Order
    • Eggs, omelets, and make-your-own waffles in the morning; tossed housemade fresh pasta to order in the evening.
       
  • Deli
    • Sandwich meats, cheeses and specialty items at lunch; housemade tortilla chips and salsa, and pita chips and hummus for dinner.
       
  • The Oven
    • Homemade pizza daily, calzones, flatbread, empanadas, and breadsticks.
       
  • Hot Cuisine*
    • Comfort foods, sustainable fish, rotisserie chicken and pork, Mexican food, vegetarian dishes, soups, rice and freshly cooked vegetables.
       
  • The Town Grill*
    • International cuisine prepared on a Mongolian grill includes pad thai, stir-fry, teriyaki bowls, fajitas, gyros, tortas, and paella. 
       
  • Fresh Greens
    • Specialty salads, organic greens, extensive variety of toppings for make-your-own salads.
       
  • Bakery
    • Freshly prepared breads and rolls, as well as delicious cakes, pies, cookies and bars.
       
  • Frozen Yogurt
    • Customers enjoy Carrillo’s “Fro Yo,” which includes housemade flavors such as peanut butter, caramel, green tea and banana.    

*A smoker creates delicious fare such as smoked salmon, chicken, pork loin turkey breast, and smoked tofu for the stir-fry specialties at both the Hot Cuisine and Town Grill stations.
